Alfresco Dining Favourites

With warmer evenings arriving, we look forward to picnics under the stars, where the décor is informal yet abundant, and evenings in the open-air are enjoyed. We cherish time together outdoors, surrounded by greenery, good company, and of course, the perfect summer spread of food. This week, we share some of our team's favourite summer recipes, perfect for alfresco hosting and honouring the season ahead.

Feta and Pine Nut Salad  

Begin your salad with a large bowl and a colourful selection of salad leaves, then combining in sundried tomatoes and one cubed cucumber; here you have the base of your salad. Next, lightly toast some pine nuts by frying in a dry pan, to create a delicious crunchy texture, and sprinkle these on top of your salad, along with an abundance of crumbled feta cheese. Finish with a drizzle of balsamic glaze and pair with grilled chicken for a source of protein!

Mediterranean Chicken Traybake

Prepare your traybake by popping 2 tbsp of olive oil in a large roasting dish, and place in a selection of roughly chopped vegetables of choice. Chop a lemon into wedges and tuck these amongst your veg, and finally placing your chicken thighs atop. Season well and add a splash of olive oil over the top. Roast for 20 minutes at 200 degrees, then removing and adding baby plum tomatoes and a large glass of white wine, before returning the traybake back to the oven at 220 degrees for a final 20 minutes to crisp and golden. Once cooked, remove from the oven and sprinkle over crumbled feta and oregano leaves, drizzle with a little more olive oil and serve.

Spicy Pineapple Tequila Sour 

Perfect to accompany any mid-summer celebration, this spicy and sour cocktail is the perfect post meal tipple to enjoy with friends in the garden. To make, muddle fresh jalapenos and 0.5 oz of simple syrup in the cocktail shaker. Add 1 oz of fresh lime juice, 1 oz of pineapple juice, 2 oz of tequila and 1 egg white, then shake. Add the ice, then shake again. Strain it into a coupe glass, then enjoy!
